Effect of Filtration Methods of Various Types of Adsorbents on the Quality of Coconut Shell and Kusambi Liquid Smoke as Raw Materials for Processed Meat Smoking

In this study, there were two groups, namely liquid smoke of kusambi and coconut shells with various treatments adsorbent filtration 3 replications. There are three kind treatment for each first is without process adsorbent, zeolite treatment, silica activated charcoal treatment. Analysis variance showed that different types had a very significant effect (P0.01) on antioxidants, total acid, specific gravity, tar, phenol content, pH, salinity, TDS, yield, L* b* color, hedonic color smokey scent in the resulting smoke. no (P0.05), but adsorbents viscosity. And analysis also (P0.05) a* The differences (P0 .01) antioxidant, aroma produced. However, did not have viscosity (P0.01). Meanwhile, value or reddish (P0.05).
